Shin of Beef (Bone in) from York House Lisbon Winter Menu

Helenka Bednar, Editor at I Love My Grub asked this morning for a Shin of Beef recipe, we are very pleased to share our recipe with all of you.

This recipe featured our last Winter Menu, and will probably return next winter too.

Shin of Beef (Bone in) from York House Lisbon
Serves 4

Ingredients:
1,2Kg Shin of Beef (Bone in) – (300gr per person)
2 carrots
2 onions
1 Table spoon of tomato
salt and pepper
½ Lt Water
½ Lt White wine
12 capers (if you don’t like capers use olives instead)
6 table spoons of olive oil

Cut the Shin Beef into slices of 4 to 6 cm each, pass them into flour.
In a skillet heat the olive oil, insert the beef and let brown for 3 to 4 minutes each side.

In an oven tray, mix the water, wine, season with salt and pepper, add tomato, carrots cut in little cubes, and chopped onions. To give more flavour add a herb bouquet made with parsley, bay leaves and thyme. Bring to boil.

When the mixture is boiling remove it from heat, stir well, place the beef and bring to a pre-heated oven (around 250ºC) without covering it, let it cook for around 1 ½ to 2 hours.

5 minutes before is ready add the capers.

Serve with risotto or with spaghetti cooked “al dente”.
